Scottish Full Breakfast

Scottish breakfasts looks so hardy and sturdy as if it could literary be your one meal for the entire day because its a huge plate. The average person would not eat this every morning but it would definitely be very tempting. The traditional Scottish full breakfast would include grilled tomatoes, a boiled egg, baked beans, potato scone (tatties scones), mushrooms, back bacon , black pudding (pork blood, with pork fat or beef suet, and a cereal, usually oatmeal, oat groats or barley groats, and spices), link sausage, buttered toast, and some add oatcakes. For vegetarians, we would have to substitute half the plate with vegan friendly "meats", like the recipes below.



Ingredients

about 75g (3 cups) nettle tops (substitute for beet greens or spinach)
A small bunch of fresh parsley
2.5 cups rolled oats
4 or 5 tbsp of peeled wheat (or pearl barley, or rice)
1 small onion
150g (5oz) cooked beetroot
100g (4oz) silken tofu
Vegetable fat and a little flour for the wrapping process

The spice mix

half tsp salt
half tsp ground spice (which is a blend of cinnamon, cloves, allspice, ginger)
A small pinch of ground cumin
1 tsp black pepper
1 tsp ground nutmeg
1 tsp dried mixed herbs (which is a blend of thyme, rosemary, sage, oregano)

Boil the peeled wheat until soft. Boil the nettles (beet greens or spinach) for about 3 minutes until they wilt. Blend the cooked nettles (beet greens or spinach) with the beetroot and tofu, then add 2 cups oats, plus the spice mix, and blend to a smooth consistency.

Place the mixture in a bowl and mix in the chopped onion, the cooked peeled wheat and the remainder of the oats. Cover and leave for an hour in the fridge. Knead the mixture into a thick sausage shape, wrap in greased baking parchment - twist and tie the ends tight, then wrap the paper packages in foil. Steam over boiling water for an hour. Leave to cool completely - overnight if possible. Remove the foil, slice into 1cm sections, carefully peel off the paper and fry the slices in vegetable oil until they begin to turn golden brown.

Serve and accompany with grilled tomatoes, a boiled egg, baked beans, potato scone (tatties scones), and mushrooms. Substitute the bacon for Sweet Earth Hickory and Sage Smoked Seitan Bacon or make the Hot for Food cassava bacon. Place two Field Roast Smoked Apple Sage Vegetarian Sausage or Field Roast Frankfurter sausages. (Both are my faves). Eat with coffee or tea.
